The exterior can be polished occasionally to maintain its shine, but regular washing after use is sufficient for daily care.

Yes. The inside of each piece is lined with pure tin, so it is the tin your food touches rather than the copper or brass beneath it. Tin is inert and has been the traditional lining for these metals for generations. Two things to know: avoid cooking strongly acidic dishes for long periods once the lining begins to wear, and have the piece re-tinned when the copper starts to show through. The Brass Tawa is the exception, as it is finished in bare brass.

Natural metals develop a patina over time due to oxidation. This is completely normal and part of their character.
